Owner Jorge Ornelas spent over 30 years living in California and Oregon before returning almost 10 years ago to open his Tex-Mex restaurant in Ajijic.
Why Tex-Mex? He thinks it’s more flavorful than traditional Mexican food.
Or maybe it’s just the way that Jorge cooks it — always tasty and beautifully presented.
They serve burritos, chimichangas (deep-fried burritos), enchiladas, nachos, and platillos: beef or pork in various sauces served in a small skillet with rice, beans, and tortillas.
Since last year, Jorge has been joined by his cook, Ángel, who spent years in the States training the new employees at five different Cheesecake Factory openings, including in Las Vegas.
Hot Rod Burrito Express is located in the back of Plaza Bugambilias in Ajijic.
